Make this Delicious Citrus London Broil Meal for Sunday Dinner (Diabetics can Enjoy it, too)

Sunday dinner or lunch, whatever you call it at your house, is a time to get the family together around the table, often with friends, for a time of good food and fellowship or bonding.  These recipes will help you make a delicious meal that will be tasty for all and can also be enjoyed by the diabetics in your group.  Citrus London Broil is a quick and easy, yet tasty, entree.  Add your favorite potato or couscous dish and in keeping with the citrus tone, this Pineapple-Lime Salad.  Make the Salad the day before and make this meal even easier.


CITRUS LONDON BROIL

1 (1 1/2 lb) London broil

1/2 cup soy sauce

3/4 cup lime juice

1 cup orange juice

1 tsp minced garlic

3 tbsp brown sugar or 2 tbsp Splenda Brown Sugar Blend

1 lime, cut into wedges

1/2 orange, thinly sliced

1/2 lemon, thinly sliced

Place beef in a shallow dish.

Combine the soy sauce, lime juice, orange juice, garlic, and brown sugar in a small bowl; mix well.  Pour half of the mixture over the beef, turning beef to coat both sides.

Preheat broiler or grill.  Cook beef for 8 minutes on each side for medium, adjusting time to the doneness you prefer.

Pour the remaining juice mixture into a small saucepan.  Bring to a simmer over medium heat.  Place beef on a serving platter and spoon the sauce over all.

Slash orange and lemon slices once from outer edge to center.  Twist slices and arrange around the beef on the platter.


PINEAPPLE LIME SALAD

2 pkgs (4-serving each) sugar-free lime gelatin

1 can (20-oz) crushed pineapple, in its own juice

1 carton (16-oz) sour cream

1 1/2 cup chopped pecans

2 cups boiling water

Drain the pineapple well!

Dissolve the gelatin in the boiling water, stirring until all gelatin is dissolved.  Add the sour cream to the gelatin mixture and stir until dissolved.  Add the well drained pineapple and nuts.  Pour into a jello mold that has been lightly wiped with vegetable oil on a paper towel.  Chill until set.
